Description

A delicious and comforting dish featuring tender pork cooked in apple cider, served with creamy mashed sweet potatoes.


Ingredients

  • 2 lbs pork tenderloin
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 large sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and add the chopped onion and garlic, sautéing until softened.
  3. Season the pork tenderloin with salt, pepper, and thyme, then add it to the skillet, browning on all sides.
  4. Pour in the apple cider and bring to a simmer.
  5. Transfer the skillet to the oven and roast for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  6. Meanwhile, boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes.
  7. Drain the sweet potatoes and return them to the pot. Add butter, milk, nutmeg, and mash until smooth.
  8. Once the pork is done, let it rest for a few minutes before slicing.
  9. Serve the sliced pork with the mashed sweet potatoes on the side.

Notes

  • For extra flavor, marinate the pork in apple cider overnight.
  • Feel free to add other herbs like rosemary or sage for variation.
