- 2 lbs pork tenderloin
- 1 cup apple cider
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 large sweet potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and add the chopped onion and garlic, sautéing until softened.
- Season the pork tenderloin with salt, pepper, and thyme, then add it to the skillet, browning on all sides.
- Pour in the apple cider and bring to a simmer.
- Transfer the skillet to the oven and roast for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Meanwhile, boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot. Add butter, milk, nutmeg, and mash until smooth.
- Once the pork is done, let it rest for a few minutes before slicing.
- Serve the sliced pork with the mashed sweet potatoes on the side.
Notes
- For extra flavor, marinate the pork in apple cider overnight.
- Feel free to add other herbs like rosemary or sage for variation.
- Leftover pork can be used in sandwiches or salads.
