Description

A delicious and hearty recipe featuring tender pulled pork mixed with ranch seasoning, stuffed into fluffy baked potatoes.


Ingredients

  • 4 large russet potatoes
  • 2 cups pulled pork
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a bowl, mix the pulled pork with ranch seasoning.
  4. Once the potatoes are done, cut them in half and scoop out some of the flesh.
  5. Mix the scooped potato flesh with the pulled pork mixture, cheddar cheese, sour cream, and green onions.
  6. Stuff the potato skins with the mixture and top with additional cheese if desired.
  7. Return to the oven and bake for an additional 10-15 minutes until heated through and cheese is melted.

Notes

  • For a spicier version, add jalapeños to the filling.
  • Leftover pulled pork works great for this recipe.
  • Can be made ahead and reheated before serving.
