Description

Ingredients

  • 1 cup Cottage Cheese
  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt & Pepper to taste
  • 1 cup Bell Peppers
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cottage cheese, eggs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a large mixing bowl and whisk until well mixed.
  3. Fold in the drained bell peppers, fresh spinach, and sun-dried tomatoes.
  4. Grease your baking dish and pour the mixture in, spreading it evenly.
  5. Bake for 25-30 minutes until the top is golden and slightly puffed.
  6. Cool slightly before slicing and serving.

Notes

You can prepare the mixture the night before and store it in the fridge. Cook in an air fryer for a quicker option. Ensure to drain vegetables well to avoid a watery texture.
