- 1 cup Spinach
- 1/2 cup Sun-Dried Tomatoes
Instructions
- Preheat your oven to 350°F (175°C).
- Combine cottage cheese, eggs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a large mixing bowl and whisk until well mixed.
- Fold in the drained bell peppers, fresh spinach, and sun-dried tomatoes.
- Grease your baking dish and pour the mixture in, spreading it evenly.
- Bake for 25-30 minutes until the top is golden and slightly puffed.
- Cool slightly before slicing and serving.
