Description

A healthy and delicious twist on traditional carrot cake, these overnight oats are perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk
  • 1 medium carrot, grated
  • 1/4 cup Greek yogurt
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp maple syrup (optional)

Instructions

  1. In a bowl, combine rolled oats, almond milk, grated carrot, Greek yogurt, raisins, and chopped walnuts.
  2. Add cinnamon, nutmeg, and maple syrup (if using) to the mixture and stir well.
  3. Cover the bowl and refrigerate overnight.
  4. In the morning, stir the oats and add more almond milk if needed for desired consistency.
  5. Top with additional walnuts or raisins if desired before serving.

Notes

  • For a vegan option, substitute Greek yogurt with a plant-based yogurt.
  • Adjust sweetness by adding more or less maple syrup.
