- 3 tbsp granulated sugar
- ¼ cup Amaretto liqueur
- 1 tbsp lemon juice
- 1 cup heavy cream, cold
- 1 cup mascarpone cheese, room temperature
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
- ¾ cup brewed espresso or strong coffee, cooled
- 2 tbsp Amaretto liqueur
- 1 pack (approx. 24) ladyfinger biscuits
- Unsweetened cocoa powder (for dusting)
- Fresh cherries and shaved dark chocolate (optional)
Instructions
- Begin by sourcing an enchanting mix of cherries, sugar, lemon juice, and Amaretto in a medium saucepan. Over medium heat, let the mixture gently bubble for 5-7 minutes. Stir occasionally, until the cherries soften and the syrup thickens, filling your kitchen with an irresistible aroma. Remove it from the heat and allow the mixture to cool completely.
- In a large mixing bowl, whip the cold heavy cream using a hand mixer until soft peaks form. It should be light and fluffy, perfect for incorporating into the mascarpone.
- In another bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until creamy and smooth. Then, gently fold the whipped cream into the mascarpone mixture, ensuring the fluffy texture remains intact.
- Next, stir the remaining 2 tablespoons of Amaretto into the cooled espresso. Pour it into a shallow dish, preparing it for the ladyfinger soaking.
- Quickly dip each ladyfinger into the espresso-Amaretto mixture for just 1-2 seconds per side, allowing them to soak without becoming too soggy.
- Arrange a single layer of the dipped ladyfingers in the bottom of an 8×8 inch dish or your chosen trifle glasses. Spoon half of the mascarpone cream over the ladyfingers.
- Evenly drizzle half of the cooled cherry mixture over the cream layer. Repeat with another layer of dipped ladyfingers, followed by remaining mascarpone cream, finishing with the rest of the cherries.
- Cover your masterpiece with plastic wrap and refrigerate for at least 240 minutes, preferably overnight.
- Just before serving, dust the top generously with cocoa powder and finish with shaved dark chocolate and a few fresh cherries for an elegant presentation.
Notes
Make-ahead tips: Prepare it a day in advance for best flavor. Avoid soaking ladyfingers too long and watch for overwhipping cream.
