Description
A luscious reinterpretation of the classic tiramisu, featuring layers of mascarpone cream, cherries steeped in Amaretto, and espresso-soaked ladyfingers.

- 2 cups fresh cherries, pitted and halved
- 3 tbsp granulated sugar
- ¼ cup Amaretto liqueur
- 1 tbsp lemon juice
- 1 cup heavy cream, cold
- 1 cup mascarpone cheese, room temperature
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
- ¾ cup brewed espresso or strong coffee, cooled
- 2 tbsp Amaretto liqueur
- 1 pack (approx. 24) ladyfinger biscuits
- Unsweetened cocoa powder (for dusting)
- Fresh cherries and shaved dark chocolate (optional, for garnish)
Instructions
- Combine the cherries with granulated sugar, lemon juice, and Amaretto in a saucepan over medium heat. Stir for 5–7 minutes until syrupy, then let cool.
- Whip the cold heavy cream in a mixing bowl until soft peaks form.
- Make the mascarpone mixture by whisking mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in the whipped cream.
- Prepare the espresso mix by stirring the remaining Amaretto into the cooled espresso and pouring it into a shallow dish.
- Dip each ladyfinger quickly into the espresso-Amaretto mixture, not exceeding 1-2 seconds per side.
- Layer the ladyfingers at the bottom of an 8″ x 8″ dish, spoon half of the mascarpone cream over them followed by half of the cherry mixture.
- Repeat the layers with the remaining ladyfingers, mascarpone cream, and cherries.
- Chill the dessert in the fridge for a minimum of 4 hours, ideally overnight.
- Serve chilled, dusting the top with cocoa powder and garnishing with fresh cherries and dark chocolate shavings.
Notes
This dessert tastes even better the next day. Ensure the mascarpone is room temperature for a smoother mix, and be cautious not to over-soak the ladyfingers.
