Instructions
- Prepare the filling: In a medium bowl, mix shredded chicken with mayonnaise (or Greek yogurt) and a pinch of salt and pepper.
- Mash the avocado: In a small bowl, mash the ripe avocado with a fork, adding lime juice and salt.
- Assemble the sandwich: Spread a layer of avocado on two slices of bread, add the chicken mixture and cheese, and top with remaining slices.
- Toast the sandwich: Heat a skillet or grill pan over medium heat, add butter or olive oil, and cook the sandwiches for 3-4 minutes on each side.
