Instructions
- Heat a splash of olive oil in a medium stock pot over medium heat.
- Add the finely diced onion and minced garlic, sautéing until soft and fragrant, about 3–5 minutes.
- Toss in the cooked shredded chicken, white beans, chicken broth, green chilies, corn, cumin, salt, and pepper.
- Stir everything together and bring to a gentle simmer, cooking for about 10–15 minutes.
- Warm the corn tortillas in a skillet over low heat.
- Assemble the tacos with the chicken chili mixture, topping with shredded cheese, sour cream, and cilantro before serving.
Notes
