Description

Delightful bite-sized pancake poppers, fluffy and customizable with various toppings such as chocolate chips or fresh fruits, perfect for any breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Toppings (chocolate chips, fresh fruits, or nuts)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your mini muffin tin generously.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Combine buttermilk, egg, and melted butter in another bowl. Whisk until smooth.
  4. Pour the wet ingredients into the dry and mix gently to combine.
  5. Fill muffin tin cavities about 3/4 full with batter.
  6. Add your chosen toppings generously on top of each popper.
  7. Bake for 10-12 minutes until golden brown and a toothpick comes out clean.
  8. Cool slightly in the tin before removing and serve warm.
