Crispy Lebanese Arayes are delicious stuffed pita pockets filled with juicy lamb and aromatic spices, delivering an irresistible blend of flavors.

- 1 lb ground lamb
- 1 small red onion (finely chopped)
- 2 cloves garlic (minced)
- ½ cup flat-leaf parsley (finely chopped)
- 1 medium tomato (grated or minced)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ tsp allspice
- ½ tsp cinnamon
- Salt and black pepper (to taste)
- 1 tbsp olive oil
- 4 large Lebanese-style pita breads
- For brushing: olive oil
- ½ cup grated Gruyere cheese
- 1 spoonful Raos Sauce
Instructions
- Mix the Filling: In a large bowl, combine the ground lamb, minced garlic, finely chopped onion, grated tomato, parsley, and spices. Drizzle in the olive oil and mix until everything blends beautifully.
- Prepare the Pita: Slice each pita bread in half to create two pockets.
- Stuff the Pita Pockets: Spoon several tablespoons of the meat mixture into each pita pocket.
- Add Cheese or Sauce: If you’re using Gruyere cheese or Raos Sauce, sprinkle these inside each stuffed pocket.
- Prepare for Grilling: Lightly coat the outsides of each stuffed pita pocket with olive oil.
- Grill It Up: Preheat your grill over medium heat and cook the stuffed pitas for about 3–4 minutes on each side.
- Serve Warm: Remove the Arayes from the heat and cut each pocket into wedges.
