Description

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.
  3. In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten them slightly with a spatula.
  6. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove from the pan and place on paper towels to drain excess oil.
  8. Serve warm with your favorite dipping sauce.
