- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Oil for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder. Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten them slightly with a spatula.
- Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Remove from the pan and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
