Description

A comforting and creamy chicken soup infused with the flavors of Parmesan cheese, perfect for a cozy meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add the chicken broth, diced tomatoes, onion, garlic, and Italian seasoning.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once the chicken is cooked, shred it with two forks.
  5. Stir in the heavy cream, Parmesan cheese, and chopped spinach.
  6. Cook for an additional 30 minutes on low until heated through.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Feel free to add other vegetables like carrots or bell peppers.
