A delicious and easy-to-make high-protein chicken ranch quesadilla that is perfect for a quick meal.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup diced bell peppers (optional)
- 1/2 cup diced onions (optional)
Instructions
- In a bowl, mix the shredded chicken with ranch dressing until well combined.
- Heat a skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheese on top.
- Add half of the chicken mixture and any optional vegetables on top of the cheese.
- Sprinkle the remaining cheese over the chicken mixture and top with another tortilla.
- Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip the quesadilla.
- Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing into wedges.
Notes
- Feel free to customize with your favorite vegetables.
- Serve with additional ranch dressing or salsa for dipping.
- Can be made ahead and reheated for a quick meal.
