Description

A delicious and easy-to-make high-protein chicken ranch quesadilla that is perfect for a quick meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)

Instructions

  1. In a bowl, mix the shredded chicken with ranch dressing until well combined.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on top.
  4. Add half of the chicken mixture and any optional vegetables on top of the cheese.
  5. Sprinkle the remaining cheese over the chicken mixture and top with another tortilla.
  6. Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip the quesadilla.
  7. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
  8. Remove from the skillet and let it cool for a minute before slicing into wedges.

Notes

  • Feel free to customize with your favorite vegetables.
  • Serve with additional ranch dressing or salsa for dipping.
  • Can be made ahead and reheated for a quick meal.
