Delicious and wholesome muffins made with grated carrots and rolled oats, perfect for breakfast or a snack.
Ingredients

- 1 cup rolled oats
- 1/2 cup brown sugar (or coconut sugar)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup grated carrots (about 2 medium carrots)
- 1/2 cup applesauce or yogurt
- 1/4 cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 cup walnuts or raisins (optional)
Instructions
- Preheat your oven to 350°F (180°C) and place muffin liners in your muffin tin.
- Mix the rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt in a mixing bowl until combined.
- Add the grated carrots, applesauce (or yogurt), vegetable oil (or melted coconut oil), and vanilla extract, then mix until just combined.
- Gently fold in walnuts or raisins if using.
- Scoop the batter into muffin cups about 2/3 full.
- Bake for 18 to 20 minutes, until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
Notes
These muffins are great for meal prep; they can be made ahead of time and stored for up to three days at room temperature.
