Description

Delicious and wholesome muffins made with grated carrots and rolled oats, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup applesauce or yogurt
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup walnuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and place muffin liners in your muffin tin.
  2. Mix the rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt in a mixing bowl until combined.
  3. Add the grated carrots, applesauce (or yogurt), vegetable oil (or melted coconut oil), and vanilla extract, then mix until just combined.
  4. Gently fold in walnuts or raisins if using.
  5. Scoop the batter into muffin cups about 2/3 full.
  6. Bake for 18 to 20 minutes, until a toothpick inserted comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.

Notes

These muffins are great for meal prep; they can be made ahead of time and stored for up to three days at room temperature.
