Description

Wholesome oatmeal cookies packed with fresh strawberries and ripe bananas, perfect for a healthy treat.


Ingredients

  • 2 large Ripe Bananas (mashed, ⅔ cup)
  • ¼ cup Pure Maple Syrup (60 ml)
  • ⅔ cup Unsweetened Almond Butter (160 g)
  • 2 cups Quick Oats (214 g)
  • ½ tsp Sea Salt
  • ¾ cup Fresh Strawberries (chopped into small chunks, 110 g)
  • 1 tsp Pure Vanilla Extract
  • 1½ tsp Ground Cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. Mash the bananas in a large bowl until creamy.
  3. Add the pure maple syrup and almond butter to the mashed bananas and stir until combined.
  4. Toss in the oats and sea salt, mixing until blended.
  5. Fold in the chopped strawberries gently.
  6. Drop mounds of dough onto your prepared baking sheet.
  7. Bake for 10 to 15 minutes until the edges turn golden brown.
  8. Cool for at least 10 minutes before transferring to a wire rack.

Notes

Feel free to customize with nuts or chocolate chips. Refrigerate dough for a day for make-ahead convenience.
