Instructions
- Prepare the Chicken: Flatten the chicken breasts between plastic wrap to about 1/2 inch thick using a meat mallet or rolling pin.

- Fill the Chicken: Lay out the flattened chicken breasts on a clean surface and spoon a generous amount of the ricotta filling onto each breast.
- Roll the Chicken: Carefully roll each chicken breast tightly, ensuring the filling is secure inside and fasten the ends with toothpicks or kitchen twine.
- Sear the Rolls: In a skillet, heat the olive oil over medium heat. Add the chicken rolls seam-side down and sear for about 5 minutes until golden brown.
- Cook Through: Pour marinara sauce over the chicken rolls, cover and let them simmer for about 15-20 minutes or until cooked through.
