Description

Delightful Herbed Ricotta Stuffed Chicken Rolls filled with creamy ricotta, fresh herbs, and served with marinara sauce—a perfect cozy dinner.

  • 4 pieces Boneless, Skinless Chicken Breasts, pounded flat
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil, chopped
  • 1/4 cup Fresh Parsley, chopped
  • 1 teaspoon Garlic Powder
  • Salt and Pepper, to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Crushed Red Pepper Flakes, optional
  • Toothpicks or Kitchen Twine, as needed

Instructions

  1. Prepare the Chicken: Flatten the chicken breasts between plastic wrap to about 1/2 inch thick using a meat mallet or rolling pin.
  2. Make the Filling: In a mixing bowl, blend together the ricotta cheese, grated Parmesan cheese, fresh spinach, basil, parsley, garlic powder, salt, and pepper until well combined.
  3. Fill the Chicken: Lay out the flattened chicken breasts on a clean surface and spoon a generous amount of the ricotta filling onto each breast.
  4. Roll the Chicken: Carefully roll each chicken breast tightly, ensuring the filling is secure inside and fasten the ends with toothpicks or kitchen twine.
  5. Sear the Rolls: In a skillet, heat the olive oil over medium heat. Add the chicken rolls seam-side down and sear for about 5 minutes until golden brown.
  6. Cook Through: Pour marinara sauce over the chicken rolls, cover and let them simmer for about 15-20 minutes or until cooked through.
  7. Serve and Enjoy: Plate the chicken rolls, drizzle remaining sauce over the top, and garnish with extra herbs if desired.
