Ingredients

- 2 cups white beans, cooked
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add cooked white beans, vegetable broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in coconut milk and blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!

- For a spicier version, add red pepper flakes.
