- 2 lbs chicken thighs
- 1 cup BBQ sauce
- 1/2 cup honey
- 2 cups rice
- 4 cups water or chicken broth
- Salt and pepper to taste
- Toppings: Fresh green onions, sesame seeds, or chopped cilantro
Instructions
- In a medium mixing bowl, stir together the BBQ sauce and honey until fully blended.
- Generously sprinkle salt and pepper over the chicken thighs.
- Heat your skillet over medium heat and place the seasoned chicken thighs in the skillet, pouring the honey BBQ mixture over them. Cook for about 20 minutes or until fully cooked, basting occasionally.
- Rinse the rice under cold water, then in a saucepan, bring water or chicken broth to a rolling boil. Stir in the rice, reduce heat, cover, and let simmer for 15-20 minutes.
- Fluff the rice with a fork and serve the BBQ chicken over it, customizing with toppings.
Notes
For a healthy option, consider using an air fryer at 380°F for about 20 minutes.
