Ingredients

  • 3 cups all-purpose flour
  • 1 cup sourdough starter
  • 1 cup warm water
  • 1/4 cup sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. In a large bowl, mix the sourdough starter, warm water, and sugar until well combined.
  2. Add the flour, salt, lemon juice, and lemon zest to the mixture and stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Gently fold in the blueberries.
  5. Place the dough in a greased bowl, cover it, and let it rise for 4-6 hours or until doubled in size.
  6. Preheat the oven to 450°F (230°C).
  7. Punch down the dough and shape it into a round loaf.
  8. Place the loaf on a baking sheet lined with parchment paper and let it rise for another 30 minutes.
  9. Score the top of the loaf with a sharp knife.
  10. Bake for 30-35 minutes or until golden brown and hollow sounding when tapped on the bottom.
  11. Let cool on a wire rack before slicing.
