- 4 medium russet potatoes, diced
- 2 tbsp olive oil
- Spices: chili powder, smoked paprika, garlic powder, cumin
- Salt and pepper to taste
- 1 lb ground beef or black beans
- 1 packet taco seasoning
- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup sour cream or Greek yogurt
- ½ cup salsa
- Green onions, cilantro, and other optional toppings like diced tomatoes, corn, jalapeños, olives
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper in a large mixing bowl.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, flipping halfway through.
- While potatoes are roasting, heat a skillet over medium-high heat and brown the ground beef (or sauté the black beans).
- Stir in taco seasoning and a splash of water; let it simmer until thickened.
- Remove potatoes from the oven and transfer to bowls; sprinkle with cheese.
- Generously top with the seasoned beef or beans.
- Finish with salsa, sour cream, green onions, cilantro, and any other desired toppings.
