Description

A delicious and customizable bowl filled with crispy potatoes, warm cheese, and savory beef or beans, topped with fresh ingredients for a fiesta of flavors.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • Spices: chili powder, smoked paprika, garlic powder, cumin
  • Salt and pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • Green onions, cilantro, and other optional toppings like diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper in a large mixing bowl.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, flipping halfway through.
  5. While potatoes are roasting, heat a skillet over medium-high heat and brown the ground beef (or sauté the black beans).
  6. Stir in taco seasoning and a splash of water; let it simmer until thickened.
  7. Remove potatoes from the oven and transfer to bowls; sprinkle with cheese.
  8. Generously top with the seasoned beef or beans.
  9. Finish with salsa, sour cream, green onions, cilantro, and any other desired toppings.
