Description

A delicious blend of crispy roasted potatoes and taco-spiced meat, topped with creamy avocado and vibrant cilantro.


Ingredients

  • 2 large Russet potatoes
  • 1 lb ground beef or turkey
  • 1 tsp taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • Fresh cilantro, for garnish
  • Olive oil, salt, and pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cube the potatoes into small, uniform pieces and toss with olive oil, salt, and pepper.
  3. Spread them on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, turning halfway through, until golden brown.
  5. Heat a skillet over medium heat and add the ground meat; cook until browned.
  6. Drain excess fat and stir in taco seasoning.
  7. Combine roasted potatoes, cooked meat, black beans, corn, and diced tomatoes in a mixing bowl.
  8. Serve topped with diced avocado, shredded cheese, sour cream, and cilantro.

Notes

You can easily make a vegetarian version using beans or lentils instead of meat.
