- 2 large Russet potatoes
- 1 lb ground beef or turkey
- 1 tsp taco seasoning
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese
- 1/2 cup sour cream
- Fresh cilantro, for garnish
- Olive oil, salt, and pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Cube the potatoes into small, uniform pieces and toss with olive oil, salt, and pepper.
- Spread them on a baking sheet in a single layer.
- Roast for 25-30 minutes, turning halfway through, until golden brown.
- Heat a skillet over medium heat and add the ground meat; cook until browned.
- Drain excess fat and stir in taco seasoning.
- Combine roasted potatoes, cooked meat, black beans, corn, and diced tomatoes in a mixing bowl.
- Serve topped with diced avocado, shredded cheese, sour cream, and cilantro.
Notes
You can easily make a vegetarian version using beans or lentils instead of meat.
