- 2 cups Hungry Jack Pancake Mix
- 1 ½ cups water
- 1 lb breakfast sausage
- 1 cup shredded cheddar cheese
- ¼ cup maple syrup
Instructions
- Preheat your oven to 400°F (200°C). Grease a mini muffin pan with non-stick spray or butter.
- Brown the breakfast sausage in a skillet over medium-high heat, about 8–10 minutes. Drain excess grease.
- Combine pancake mix and water in a large mixing bowl, then fold in the sausage, cheese, and maple syrup.
- Fill each muffin cup three-quarters full with the batter.
- Bake for 12–15 minutes until golden brown and a toothpick comes out clean.
- Enjoy them warm with additional maple syrup on the side.
Notes
Customize with jalapeños or different cheeses. Make-ahead batter can be stored overnight.
