- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 medium red onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the sliced red onion and sauté until translucent.
- Add the chopped spinach and cook until wilted.
- Remove the mixture from the skillet and set aside.
- Place one tortilla in the skillet, and sprinkle half of the mozzarella cheese on one half of the tortilla.
- Add half of the spinach and onion mixture on top of the cheese.
- Sprinkle half of the feta cheese over the spinach mixture.
- Fold the tortilla in half and cook until golden brown on both sides.
- Repeat with the remaining ingredients to make another quesadilla.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- Serve with a side of tzatziki or salsa for dipping.
- These quesadillas can be made ahead and reheated for a quick meal.
