- 8 tablespoons butter, divided
- Handful of fresh parsley leaves, chopped
- 3 large eggs, lightly beaten
- 1.1 pound warqa, filo dough, or large spring roll wrappers
- 1 egg yolk, lightly beaten
- Oil, for frying
Instructions
- Prepare the filling: In a large mixing bowl, combine the ground meat, finely chopped onions, cumin, paprika, pepper, cinnamon, and salt. Use your hands to mix until well combined.
- Add herbs and eggs: Incorporate the chopped parsley and lightly beaten eggs into the mixture.
- Wrap the pastries: Take a sheet of your chosen wrapper and lay it flat. Spoon a portion of the filling onto one end, fold the sides over, and roll tightly.
- Fry to perfection: Heat oil in a deep frying pan over medium heat. Gently place several pastries in the hot oil and fry until golden brown.
- Drain and serve: Remove the pastries with a slotted spoon and drain excess oil. Let them cool slightly before serving.

Make-ahead: Prepare the filling a day ahead and keep refrigerated. For a healthier option, bake at 375°F (190°C) for 20-25 minutes.
