Description

Deliciously tangy Raspberry Lemon Bars with a buttery crust and a creamy filling, perfect for summer gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 0.25 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup fresh raspberries
  • 1 teaspoon baking powder
  • 0.5 teaspoon vanilla extract
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by whisking together flour, powdered sugar, and salt in a medium bowl, then mix in melted butter.
  3. Press the mixture into the bottom of a greased or parchment-lined 8×8 inch baking pan and bake for 15 minutes.
  4. Whisk together eggs and granulated sugar in a large bowl, then add lemon juice, zest, and vanilla extract.
  5. Fold in the raspberries and baking powder gently.
  6. Pour the raspberry lemon mixture over the pre-baked crust and bake for an additional 20-25 minutes.
  7. Cool completely at room temperature, then refrigerate for at least 1 hour.
  8. Dust with powdered sugar and slice into squares before serving.
