- 2 large eggs
- 1 cup granulated sugar
- 0.25 cup fresh lemon juice

- 1 cup fresh raspberries
- 1 teaspoon baking powder
- 0.5 teaspoon vanilla extract
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by whisking together flour, powdered sugar, and salt in a medium bowl, then mix in melted butter.
- Press the mixture into the bottom of a greased or parchment-lined 8×8 inch baking pan and bake for 15 minutes.
- Whisk together eggs and granulated sugar in a large bowl, then add lemon juice, zest, and vanilla extract.
- Fold in the raspberries and baking powder gently.
- Pour the raspberry lemon mixture over the pre-baked crust and bake for an additional 20-25 minutes.
- Cool completely at room temperature, then refrigerate for at least 1 hour.
- Dust with powdered sugar and slice into squares before serving.
