Description

A vibrant raw carrot salad tossed with fresh herbs and a zesty dressing, perfect for any occasion.


Ingredients

  • 3 large carrots, peeled and shredded
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon agave syrup (or maple syrup)
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon kosher salt
  • 2 tablespoons chopped parsley
  • 2 teaspoons sesame seeds
  • 1 tablespoon chopped cilantro or mint (optional)

Instructions

  1. Start by peeling and trimming your carrots, then shred them into long strands using a box grater or food processor.
  2. Combine olive oil, lime juice, apple cider vinegar, agave syrup, ground coriander, cayenne pepper, and kosher salt in a small bowl and whisk until blended.
  3. Pour the dressing over the shredded carrots and toss thoroughly to coat.
  4. Add the chopped parsley and sesame seeds, folding them into the salad.
  5. Transfer to a serving bowl and enjoy immediately, or allow to sit for about 10 minutes for enhanced flavor.

Notes

For a custom twist, consider adding nuts or dried fruits. This salad is best enjoyed fresh but can be stored in an airtight container in the fridge for up to three days.
