Description

A hearty breakfast featuring crispy potatoes, savory sausage, and fluffy scrambled eggs, topped with melted cheddar and fresh green onions.

Ingredients

Scale
  • 1 lb ground breakfast sausage
  • 4 medium potatoes, peeled and diced into 1/2-inch cubes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: hot sauce, sour cream, avocado slices

Instructions

  1. Cook the sausage: Heat a large skillet over medium heat. Add the ground breakfast sausage, breaking it apart into crumbles as it cooks. Once fully cooked, remove the sausage and set aside.
  2. Sauté the potatoes: In the same skillet, add the olive oil. Toss in the diced potatoes and season with salt and pepper. Cook until golden brown and crispy.
  3. Scramble the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the mixture into the skillet and gently stir for soft, fluffy scrambled eggs.
  4. Assemble your bowls: Divide the potatoes and sausage among four bowls. Spoon in scrambled eggs and top with cheddar cheese and green onions.
  5. Serve immediately: Enjoy warm with optional toppings.

Notes

Consider using a mix of pork and turkey sausage for a healthier variation. Customize with different cheeses or vegetables for added flavor.
