- 4 chicken thighs
- 1 cup plain yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- 1 pound baby potatoes
- 2 tablespoons butter
Instructions
- In a bowl, mix yogurt, olive oil, lemon juice, smoked paprika, cayenne pepper, garlic powder, salt, and pepper.
- Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour.
- Preheat the oven to 400°F (200°C).
- Boil baby potatoes in salted water until tender, then drain.
- In a baking dish, toss potatoes with butter, salt, and pepper. Roast in the oven for 20-25 minutes until crispy.
- While potatoes are roasting, grill or bake the marinated chicken until cooked through, about 20-25 minutes.
- In a separate bowl, mix feta cheese and dill to create the cream.
- Serve the chicken with crispy potatoes and dill feta cream on the side.
Notes
- For extra flavor, marinate the chicken overnight.
- Adjust the spice level by varying the amount of cayenne pepper.
- Serve with a side salad for a complete meal.
