Description

A vibrant and flavorful bowl featuring tender chicken, charred corn, and creamy lime sauce, perfect for family dinners or meal prep.


Ingredients

  • 2 cups cooked rice (brown, jasmine, or basmati)
  • 2 cups charred corn (fresh or frozen)
  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Season the chicken with smoked paprika, garlic powder, onion powder, salt, and pepper. Coat well.
  2. Cook the chicken in a heated skillet over medium heat for 5-7 minutes on each side until golden brown and fully cooked. Let rest before slicing.
  3. Char the corn in the same skillet until heated through.
  4. Mix sour cream and lime juice in a bowl until smooth.
  5. Assemble the bowls with a base of rice, topped with sliced chicken, charred corn, and drizzle with lime sauce.
