- 1 cup white vinegar
- 1 cup water
- 1/2 cup sugar

- 1 teaspoon coriander seeds
Instructions
- In a saucepan, combine vinegar, water, sugar, salt, red pepper flakes, mustard seeds, and coriander seeds. Bring to a boil over medium heat.
- Once boiling, remove from heat and let the brine cool for about 10 minutes.
- Place the carrot sticks in a clean jar.
- Pour the cooled brine over the carrots, ensuring they are fully submerged.
- Seal the jar and refrigerate for at least 24 hours before serving.
Notes
- For extra heat, add more red pepper flakes.
- These pickled carrots can be stored in the refrigerator for up to 2 weeks.
