Description

Ingredients

  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds

Instructions

  1. In a saucepan, combine vinegar, water, sugar, salt, red pepper flakes, mustard seeds, and coriander seeds. Bring to a boil over medium heat.
  2. Once boiling, remove from heat and let the brine cool for about 10 minutes.
  3. Place the carrot sticks in a clean jar.
  4. Pour the cooled brine over the carrots, ensuring they are fully submerged.
  5. Seal the jar and refrigerate for at least 24 hours before serving.

Notes

  • For extra heat, add more red pepper flakes.
  • These pickled carrots can be stored in the refrigerator for up to 2 weeks.
