- 2 slices of Sourdough or Whole Wheat Bread
- 1 cup Brie Cheese, sliced
- 1 cup Fresh Blueberries
- 2 tablespoons Butter
- Optional: Maple Syrup or Honey for drizzling
- Fresh Herbs (such as Thyme or Basil)
Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, add blueberries and mash lightly. Stir in sugar and lemon juice, cooking for 5-7 minutes until thickened. Set aside.
- Prepare the Bread: Butter one side of each bread slice.
- Assemble the Sandwich: On the unbuttered side of one bread slice, layer brie, blueberry compote, and herbs. Top with the other slice, buttered side up.
- Cook the Sandwich: Heat skillet over medium. Grill the sandwich for 3-4 minutes until golden brown on one side.
- Flip and Finish: Flip the sandwich and grill for another 3-4 minutes until the other side is golden and cheese melts.
- Serve: Cool slightly, cut in half, and optionally drizzle with maple syrup or honey.
Notes
Use room-temperature brie for easier spreading. The blueberry compote can be made a day ahead for convenience.
