Description

A hearty breakfast casserole that combines breakfast favorites like sausage, eggs, and cheese in a deliciously baked burrito form.


Ingredients

  • 8 large flour tortillas
  • 1 lb breakfast sausage, cooked and crumbled
  • 8 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 cup hash browns, cooked or thawed frozen
  • ½ cup salsa
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Sour cream, for topping
  • Chopped green onions, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with non-stick spray or butter.
  3. Whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder in a large mixing bowl until combined.
  4. Scramble the egg mixture in a skillet over medium heat until just set, then remove from heat.
  5. Prepare the tortillas by laying them out flat and distributing the sausage, scrambled eggs, hash browns, salsa, and half of the shredded cheese evenly on each.
  6. Roll each tortilla into a tight burrito and place seam-side down in the prepared baking dish.
  7. Top the burritos with the remaining shredded cheese.
  8. Bake for 20 minutes covered with foil, then remove the foil and bake for an additional 10 minutes until the cheese is melted and golden.
  9. Garnish with sour cream and chopped green onions before serving.
