- 1/2 cup Unsalted Butter (cold and cubed)
- 1/4 cup Granulated Sugar
- 1/4 teaspoon Salt
- 1 large Egg Yolk
- 2–4 tablespoons Ice Water
- 2 cups Fresh Blackberries
- 1/2 cup Granulated Sugar (for filling)
- 1 tablespoon Lemon Juice
- 2 tablespoons Cornstarch
- 1/2 cup Light Brown Sugar
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted)
- 1/2 cup Unsalted Butter (cold and cubed, for topping)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- Make the crust: In a mixing bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter until resembling coarse crumbs. Stir in the egg yolk and incorporate the ice water to form dough. Press into a 9×9-inch baking pan and prick with a fork. Bake for 15-20 minutes.
- Prepare the filling: In a saucepan, combine blackberries, sugar, lemon juice, and cornstarch. Cook over medium heat for 5-7 minutes until it thickens.
- Make the topping: In a mixing bowl, combine brown sugar, pistachios, cold butter, and baking powder. Mix until crumbly. Whisk in the egg and vanilla.
- Assemble the bars: Pour blackberry filling over the crust and sprinkle the pistachio topping across the filling.
- Bake for an additional 25-30 minutes until the topping is golden.
- Let the bars cool for at least 30 minutes before slicing.
Notes
These bars can be stored in an airtight container in the refrigerator for up to five days. Freezing is an option for longer storage.
