- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup chocolate chips
- 1/2 cup heavy cream (for chocolate glaze)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition and then stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the butter mixture, mixing just until combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden, then cool on a baking sheet for a few minutes before transferring to a rack.
- Whip the heavy cream with powdered sugar to stiff peaks for the filling.
- Spread whipped cream onto the bottom of half the cookies and top each with another cookie.
- Heat ½ cup of heavy cream until simmering, then stir in chocolate chips until melted and smooth.
- Drizzle the chocolate glaze over the cookies before serving.
Notes
Make-ahead: Store cookies in an airtight container for up to three days. Assemble with cream and glaze just before serving.
