Description

A whimsical take on the classic Boston cream pie, these cookies feature layers of sweet vanilla cream and rich chocolate glaze, perfect for any celebration.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup chocolate chips
  • 1/2 cup heavy cream (for chocolate glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition and then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to the butter mixture, mixing just until combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden, then cool on a baking sheet for a few minutes before transferring to a rack.
  8. Whip the heavy cream with powdered sugar to stiff peaks for the filling.
  9. Spread whipped cream onto the bottom of half the cookies and top each with another cookie.
  10. Heat ½ cup of heavy cream until simmering, then stir in chocolate chips until melted and smooth.
  11. Drizzle the chocolate glaze over the cookies before serving.

Notes

Make-ahead: Store cookies in an airtight container for up to three days. Assemble with cream and glaze just before serving.
