Description
A hearty breakfast club sandwich with layers of crispy bacon, fresh lettuce, ripe tomatoes, creamy avocado, and perfectly fried eggs, all hugged by toasty whole grain bread.

- 3 slices of whole grain bread
- 2 large eggs
- 4 slices of smoked bacon
- 2 slices of cheddar cheese
- 1 ripe tomato, thinly sliced
- 1 avocado, mashed
- 2 tablespoons mayonnaise
- 1 tablespoon butter
- Fresh lettuce leaves
- Salt and pepper to taste
Instructions
- Start your day by cooking the bacon. Heat a skillet over medium heat and lay down the bacon strips.
- Once golden, drain on paper towels and set aside.
- In that same skillet, melt the tablespoon of butter over medium heat.
- As the butter melts, crack in your eggs and season with salt and pepper. Cook until whites are set and yolks are runny.
- While the pan is still warm, toast your slices of whole grain bread.
- Once toasted, spread mayonnaise on one side of each slice.
- Begin building your sandwich: layer lettuce, tomato, and bacon on the first slice.
- Spread avocado on the second slice, then layer eggs and cheddar cheese.
- Top with the last slice of bread, mayonnaise side down.
- Secure with toothpicks and slice for serving.
