Description

A hearty breakfast club sandwich with layers of crispy bacon, fresh lettuce, ripe tomatoes, creamy avocado, and perfectly fried eggs, all hugged by toasty whole grain bread.


Ingredients

  • 3 slices of whole grain bread
  • 2 large eggs
  • 4 slices of smoked bacon
  • 2 slices of cheddar cheese
  • 1 ripe tomato, thinly sliced
  • 1 avocado, mashed
  • 2 tablespoons mayonnaise
  • 1 tablespoon butter
  • Fresh lettuce leaves
  • Salt and pepper to taste

Instructions

  1. Start your day by cooking the bacon. Heat a skillet over medium heat and lay down the bacon strips.
  2. Once golden, drain on paper towels and set aside.
  3. In that same skillet, melt the tablespoon of butter over medium heat.
  4. As the butter melts, crack in your eggs and season with salt and pepper. Cook until whites are set and yolks are runny.
  5. While the pan is still warm, toast your slices of whole grain bread.
  6. Once toasted, spread mayonnaise on one side of each slice.
  7. Begin building your sandwich: layer lettuce, tomato, and bacon on the first slice.
  8. Spread avocado on the second slice, then layer eggs and cheddar cheese.
  9. Top with the last slice of bread, mayonnaise side down.
  10. Secure with toothpicks and slice for serving.
