Description

A comforting Chicken Avocado Melt Sandwich with tender chicken, creamy avocado, and gooey cheese, perfect for any meal.


Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of your favorite cheese
  • 4 slices of bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Place the chicken in the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove from the skillet and let the chicken rest before slicing thinly.
  5. Slice the avocado and prepare the cheese.
  6. Spread mayonnaise and Dijon mustard on one side of each slice of bread.
  7. Layer sliced chicken, avocado, cheese, onions, and tomatoes on two slices of bread, mayo side down.
  8. Top with remaining bread, mayo side up, to assemble the sandwiches.
  9. Add butter or olive oil to the skillet and place the sandwiches on it.
  10. Grill for 3-4 minutes per side until golden brown and cheese is melted.
  11. Cut the sandwiches in half and serve warm.

Notes

Customize with different cheeses or herbs for added flavor. Serve with sides like salad, chips, or soup.
