Description

Indulge in rich Chocolate Raspberry Cheesecake Domes featuring a velvety chocolate shell filled with creamy cheesecake and raspberries.


Ingredients

Scale
  • 200g chocolate (for the shell)
  • 250g cream cheese
  • 100g sugar
  • 100g raspberries (fresh or puree)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 100g chocolate cake (for the base)
  • Silicone molds

Instructions

  1. Melt the chocolate in a double boiler until smooth and coat the inside of silicone molds. Refrigerate for 30 minutes.
  2. Prepare the cheesecake filling by beating cream cheese and sugar in a mixing bowl until fluffy.
  3. Add raspberry puree and vanilla extract, mixing for a homogenous mixture.
  4. Incorporate the eggs one at a time, mixing thoroughly after each addition.
  5. Fill the molds with cheesecake mixture, leaving half an inch for the cake base.
  6. Create the base by pressing chocolate cake circles into the filling.
  7. Seal with melted chocolate and refrigerate for about an hour.
  8. Demold and serve cold or at room temperature.

Notes

Can be made up to three days ahead. Ensure they are tightly covered in the refrigerator. Customize filling with other berries or flavors as desired.
