- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 packets ramen noodles
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- ½ cup heavy cream
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat a splash of oil in a large pot over medium heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Introduce the chicken breasts, cooking until golden brown and cooked through, about 6-8 minutes on each side.
- Remove the chicken from the pot and slice it into bite-sized pieces.
- Pour the chicken broth into the same pot, bringing it to a boil.
- Add the ramen noodles and cook according to package instructions, approximately 4-5 minutes.
- Toss in the broccoli and bell peppers, stirring until tender, about 3-4 minutes.
- Stir in the soy sauce and heavy cream, mixing thoroughly.
- Add the sliced chicken back into the pot and let warm through for 1-2 minutes.
- Season with salt and pepper to taste and serve hot, garnished with green onions.
Notes
For a vegetarian version, substitute chicken with tofu and chicken broth with vegetable broth.
