- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- 1 cup shredded sharp cheddar cheese
- ½ cup diced red onions

- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a medium mixing bowl, whisk together the mayonnaise, sriracha sauce, honey, smoked paprika, garlic powder, and lime juice until smooth.
- Prep the Toppings: While the grill heats up, take a moment to dice the red onions, slice the jalapeños, shred the cheese, and chop the cilantro.
- Heat the Grill: Preheat your grill to medium-high heat, around 400°F.
- Grill the Hot Dogs: Place the hot dogs on the grill and cook for 5-7 minutes, turning occasionally.
- Toast the Buns: In the last 2 minutes of cooking, place the buns, cut-side down, on the grill to toast.
- Assemble the Hot Dogs: Spread a generous amount of Firecracker Sauce inside each toasted bun, add a grilled hot dog, followed by shredded cheese, diced onions, jalapeños, and cilantro.
- Serve Immediately: Enjoy straight off the grill while the cheese is melty and the toppings are fresh.
Notes
Make the Firecracker Sauce a day in advance for better flavor. You can also cook these hot dogs in an air fryer or broiler if you don’t have a grill.
