Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk the dry ingredients in a large bowl: flour, sugar, baking powder, and salt.
- Combine the wet ingredients in another bowl: melted butter, milk, eggs, and vanilla extract.
- Mix the wet mixture into the dry ingredients gently until just combined.
- Fold in the chopped cherries until evenly distributed.
- Prepare the streusel topping by mixing brown sugar, flour, rolled oats, softened butter, and cinnamon in a separate bowl until crumbly.
- Fill the muffin cups with batter, filling them about two-thirds full, and sprinkle streusel on top.
- Bake for 20-25 minutes, checking for doneness with a toothpick.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
For added brightness, consider adding lemon zest to the batter. You can substitute cherries with other fruits like blueberries.
