- 1½ cups Funfetti cake mix
- 1 cup all-purpose flour plus more for dusting
- ¼ teaspoon salt
- 2 tablespoons rainbow sprinkles
- ½ cup unsalted butter, cold and cut into pieces
- 1 cup heavy whipping cream, cold, plus more for brushing
- 1 teaspoon pure vanilla extract
- 1 cup powdered sugar, sifted
- 1–2 tablespoons milk
Instructions
- Combine Dry Ingredients: In a large mixing bowl, whisk together the Funfetti cake mix, all-purpose flour, salt, and rainbow sprinkles.
- Cut in the Butter: Using a pastry cutter or two forks, work the cold butter into the flour mixture until it resembles coarse crumbs.
- Mix in the Cream: In a separate bowl, whisk the vanilla extract into the cold heavy cream. Make a well in the flour mixture and pour in the liquid in two parts, mixing gently until a dough forms.
- Shape the Dough: On a floured surface, fold the dough a couple of times until it comes together, then form it into a round disk about 7 inches wide.
- Cut and Chill: Slice the disk into eight triangles and refrigerate for 30 minutes to 1 hour.
- Bake to Perfection: Preheat your oven to 400°F. Bake the scones for 18-20 minutes until golden-brown.
- Prepare the Glaze: Whisk the sifted powdered sugar and milk together until smooth and drizzle over the cooled scones.
Notes
Use cold butter for a flaky texture. Chilling the dough helps the scones stay in shape while baking.
