Description

Ingredients

  • 1½ cups Funfetti cake mix
  • 1 cup all-purpose flour plus more for dusting
  • ¼ teaspoon salt
  • 2 tablespoons rainbow sprinkles
  • ½ cup unsalted butter, cold and cut into pieces
  • 1 cup heavy whipping cream, cold, plus more for brushing
  • 1 teaspoon pure vanilla extract
  • 1 cup powdered sugar, sifted
  • 12 tablespoons milk

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the Funfetti cake mix, all-purpose flour, salt, and rainbow sprinkles.
  2. Cut in the Butter: Using a pastry cutter or two forks, work the cold butter into the flour mixture until it resembles coarse crumbs.
  3. Mix in the Cream: In a separate bowl, whisk the vanilla extract into the cold heavy cream. Make a well in the flour mixture and pour in the liquid in two parts, mixing gently until a dough forms.
  4. Shape the Dough: On a floured surface, fold the dough a couple of times until it comes together, then form it into a round disk about 7 inches wide.
  5. Cut and Chill: Slice the disk into eight triangles and refrigerate for 30 minutes to 1 hour.
  6. Bake to Perfection: Preheat your oven to 400°F. Bake the scones for 18-20 minutes until golden-brown.
  7. Prepare the Glaze: Whisk the sifted powdered sugar and milk together until smooth and drizzle over the cooled scones.

Notes

Use cold butter for a flaky texture. Chilling the dough helps the scones stay in shape while baking.
