- 10–12 baguette slices (about ½” thick)
- 6 tbsp olive oil, divided
- 1 teaspoon garlic powder
- 1 avocado
- Juice of ½ lime
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 12 large shrimp, peeled and deveined
- 2 big garlic cloves, cut into slivers
- ¾ teaspoon smoked paprika
- ½ teaspoon cumin
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 350°F.
- Slice the baguette into 10-12 pieces, each about ½ inch thick.
- Whisk together 3 tablespoons of olive oil with 1 teaspoon of garlic powder.
- Brush both sides of each baguette slice with the garlic-infused oil.
- Bake the crostini for about 10-15 minutes until golden and crunchy.
- Halve the avocado, scoop the flesh into a bowl, and mash until smooth.
- Add lime juice, salt, and black pepper to the mashed avocado and mix well.
- Heat the remaining olive oil in a skillet, add sliced garlic, and sauté.
- Increase the heat, add shrimp, and season with smoked paprika, cumin, salt, and pepper.
- Cook until shrimp are pink and opaque, about 3-5 minutes.
- Spread a layer of avocado mixture on each crostini and top with a shrimp.
- Serve immediately and enjoy!
Notes
Best enjoyed fresh. Avocado spread can be made a few hours in advance. Cover to minimize browning.
