Description

A vibrant and refreshing Greek Bean Salad with cherry tomatoes, cucumber, white beans, and feta, all drizzled with zesty lemon dressing.


Ingredients

  • 1 can white beans (such as cannellini or Great Northern), rinsed and drained
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup olives (Kalamata or green), pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley or oregano for garnish (optional)

Instructions

  1. In a large bowl, combine the rinsed white beans, diced cucumber, halved cherry tomatoes, finely chopped red onion, halved olives, and crumbled feta. Stir gently to mix, being careful not to mash the beans.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss to combine, allowing the flavors to meld.
  4. Let the salad rest for about 10 minutes.
  5. Just before serving, garnish with fresh parsley or oregano.

Notes

Allow salad to rest for a few minutes to enhance flavor melding. Store in an airtight container for up to two days.
