- 4 ripe peaches
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar or coconut sugar
- ½ teaspoon ground cinnamon
- Vegetable oil (for brushing or spraying the grill)
- 2 cups Greek yogurt or plant-based yogurt
- 2–4 tablespoons honey or maple syrup
- 1 cup granola
- ½ cup blueberries
- ¼ cup Remix Snacks Chocolate Bean Bark with peach chunks, chopped
- Fresh mint leaves (optional)
Instructions
- Preheat the grill: Heat your grill or grill pan to medium-high.
- Prepare the peaches: Halve and pit the peaches, then slice each half into three wedges.
- Mix the sugars: In a small bowl, whisk together the granulated sugar, brown sugar, and ground cinnamon.
- Coat the peaches: Press the cut side of each peach wedge into the sugar mixture.
- Grill the peaches: Brush the grill pan with a bit of oil. Place the peaches cut side down and grill for about 2-3 minutes per side.
- Layer the yogurt: In serving bowls, evenly divide the yogurt.
- Add fruits and granola: Layer the grilled peaches, followed by blueberries and granola.
- Drizzle and garnish: Finish with a drizzle of honey or maple syrup and mint leaves if desired.
