Description

A delightful parfait featuring grilled peaches and juicy blueberries layered with creamy yogurt and crunchy granola, perfect for summer.


Ingredients

  • 4 ripe peaches
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar or coconut sugar
  • ½ teaspoon ground cinnamon
  • Vegetable oil (for brushing or spraying the grill)
  • 2 cups Greek yogurt or plant-based yogurt
  • 24 tablespoons honey or maple syrup
  • 1 cup granola
  • ½ cup blueberries
  • ¼ cup Remix Snacks Chocolate Bean Bark with peach chunks, chopped
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the grill: Heat your grill or grill pan to medium-high.
  2. Prepare the peaches: Halve and pit the peaches, then slice each half into three wedges.
  3. Mix the sugars: In a small bowl, whisk together the granulated sugar, brown sugar, and ground cinnamon.
  4. Coat the peaches: Press the cut side of each peach wedge into the sugar mixture.
  5. Grill the peaches: Brush the grill pan with a bit of oil. Place the peaches cut side down and grill for about 2-3 minutes per side.
  6. Layer the yogurt: In serving bowls, evenly divide the yogurt.
  7. Add fruits and granola: Layer the grilled peaches, followed by blueberries and granola.
  8. Drizzle and garnish: Finish with a drizzle of honey or maple syrup and mint leaves if desired.
