Description

A hearty Loaded Potato Taco Bowl that combines crispy roasted potatoes, seasoned ground beef or turkey, and a variety of fresh toppings for a comforting and flavorful meal.


Ingredients

  • 4 Medium Potatoes, diced
  • 1 lb Ground Beef or Turkey
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • Salt and Pepper to Taste
  • 1 cup Diced Tomatoes
  • 1 cup Corn
  • 1 cup Black Beans, rinsed and drained
  • 1 Avocado, diced
  • 1 cup Shredded Cheese
  • Fresh Cilantro, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper, and arrange them on a baking sheet.
  3. Roast the potatoes for 25-30 minutes, flipping halfway through.
  4. Heat a skillet over medium heat and add the ground meat, cooking until browned.
  5. Mix in chili powder, cumin, salt, and pepper, allowing spices to bloom for 5-7 minutes.
  6. Combine roasted potatoes, cooked meat, diced tomatoes, corn, and black beans in a large bowl.
  7. Serve in bowls and top with diced avocado, shredded cheese, and cilantro.
