Description

A decadent shrimp pasta dish enveloped in a creamy sauce, perfect for romantic dinners or family meals.


Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 10 oz Linguine or fettuccine pasta
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 1/2 tsp Red Pepper Flakes
  • 1/2 cup Sun-Dried Tomatoes, chopped
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsp Butter
  • 1 tbsp Fresh Basil, chopped (for garnish)

Instructions

  1. Boil the Pasta: In a large pot of salted water, bring to a boil and cook linguine or fettuccine until al dente, according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. Sear the Shrimp: In a large skillet over medium heat, add olive oil and toss in the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant, then add the shrimp. Cook for approximately 2-3 minutes per side until pink. Remove shrimp and set aside.
  3. Create the Sauce: In the same skillet, melt butter and add chopped sun-dried tomatoes and chicken broth or wine. Stir for a minute before pouring in the heavy cream and sprinkling the Parmesan cheese. Allow to simmer for 3-5 minutes.
  4. Combine Ingredients: Lower the heat and return the shrimp to the skillet, then toss in the drained pasta, mixing well to coat. If the sauce is too thick, add reserved pasta water as needed.
  5. Garnish and Serve: Off the heat, sprinkle with chopped fresh basil and serve immediately.

Notes

Make the sauce ahead of time and cook the pasta fresh for optimal texture. Consider adding vegetables like spinach for extra nutrition.
