Description

Delicious meal prep breakfast eggs filled with colorful vegetables, perfect for busy mornings.


Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced spinach
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, salt, and pepper in a large mixing bowl until frothy.
  3. Grease a 9×13 inch baking dish with olive oil.
  4. Spread diced bell peppers, onions, and spinach evenly across the bottom of the dish.
  5. Pour the egg mixture over the vegetables.
  6. Bake for 25-30 minutes, or until puffy and golden.
  7. Allow to cool slightly before slicing into squares.

Notes

Store in airtight containers in the fridge for up to one week. They also freeze well for up to two months.
