Description

This delightful Plum Upside-Down Cake features a moist, tender crumb with tart plums topped with a rich caramel layer, making it a perfect dessert for any occasion.


Ingredients

  • 4 cups fresh plums, pitted and sliced
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan generously.
  2. Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar until smooth and bubbly, then pour into the prepared pan.
  3. Arrange the sliced plums on top of the caramel in the pan.
  4. Whisk together the granulated sugar, eggs, and vanilla extract in a mixing bowl until smooth and frothy.
  5. Combine the flour, baking powder, baking soda, and salt in another bowl. Alternate adding the dry ingredients and buttermilk to the egg mixture, starting and ending with the dry ingredients.
  6. Pour the batter over the plums in the pan, spreading it evenly.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes, then invert onto a serving plate.

Notes

Serve warm or at room temperature for enhanced flavors. This cake can be made a day ahead to deepen the taste.
