A delightful dessert capturing the essence of tropical getaways with rum-soaked, golden fried pineapple rings, coated in crunchy coconut flakes.

- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 1/2 cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil (for frying)
- 4 oz. cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Soak the pineapple rings in a medium bowl with dark and coconut rums for at least one hour.
- Prepare the coating station with flour, egg mixture, and coconut flakes.
- Coat each ring in flour, dip in egg mixture, then press into coconut flakes.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Fry the pineapple rings for about 1 minute per side until golden brown.
- Make the dipping sauce by combining cream cheese and powdered sugar, adding reserved rum to reach desired consistency.
Notes
For enhanced flavor, soak the pineapple overnight. Can also be air-fried for a lighter version.
