Description

A delightful dessert capturing the essence of tropical getaways with rum-soaked, golden fried pineapple rings, coated in crunchy coconut flakes.


Ingredients

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in a medium bowl with dark and coconut rums for at least one hour.
  2. Prepare the coating station with flour, egg mixture, and coconut flakes.
  3. Coat each ring in flour, dip in egg mixture, then press into coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C).
  5. Fry the pineapple rings for about 1 minute per side until golden brown.
  6. Make the dipping sauce by combining cream cheese and powdered sugar, adding reserved rum to reach desired consistency.

Notes

For enhanced flavor, soak the pineapple overnight. Can also be air-fried for a lighter version.
