Description

A luxurious pasta dish featuring tender shrimp in a creamy garlic sauce, wrapped around luscious noodles, perfect for any occasion.


Ingredients

  • 1 cup low-moisture mozzarella (shredded)
  • Juice from one lemon (approximately 2 tablespoons)
  • 1/4 teaspoon crushed red chili flakes (optional for some heat)
  • 4 tablespoons unsalted butter (divided)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 1 pound large shrimp (shells removed and deveined)
  • 1 teaspoon finely grated lemon zest
  • 12 ounces of dried spaghetti or linguine noodles
  • 1/2 cup dry white wine or low-sodium chicken broth
  • 3 tablespoons extra virgin olive oil
  • 5 cloves fresh garlic (finely minced)
  • 1/4 cup Italian flat-leaf parsley (chopped)
  • 1/2 cup finely grated Parmesan cheese
  • Kosher salt (to taste)

Instructions

  1. Boil water: Bring a large pot of well-salted water to a rolling boil.
  2. Cook the pasta: Add the spaghetti (or linguine) and cook until just shy of al dente—approximately 1 to 2 minutes less than the package instructions. Drain and set aside.
  3. Sear the shrimp: Heat olive oil along with 2 tablespoons of butter in a large skillet over medium heat. Pat shrimp dry and season with salt and pepper. Add to the skillet, searing for 1 to 2 minutes per side until opaque and slightly golden. Remove from the skillet and keep warm.
  4. Create the sauce: In the same skillet, melt the remaining 2 tablespoons of butter and sauté the garlic and optional red pepper flakes for 30 seconds. Add wine and lemon juice, then let simmer for 2 to 3 minutes until reduced.
  5. Combine the pasta and shrimp: Return drained pasta to the skillet, toss in the sauce. Stir in half the Parmesan and parsley, gently folding in the shrimp.
  6. Prepare for baking: Transfer the mixture into a greased 9-by-13-inch baking dish and sprinkle with mozzarella and remaining Parmesan.
  7. Bake: Place in a preheated oven at 375°F (190°C) for 15 minutes, until cheese melts and is golden.
  8. Garnish and serve: Remove from oven, top with remaining parsley and additional lemon juice if desired, serve hot.

Notes

For best results, do not overcook shrimp. Optionally, add seasonal vegetables for more color and texture.
